You may have guessed from the name that we are a delicatessen specialising in Mediterranean food - you can eat in, take out or stock up on the right the Mediterranean has to provide - how did we pick such a great line up? We trained to spot them - we formally studied wine, coffee, charcuterie and cheese before we ever opened a deli, on top of formal cookery training years back (our David even went through the Heathcote's training school) We spent 3 months travelling from Preston to Andalucia and back, sampling foods in the environment in which they were produced (hard work, but someone had to do it!
