I have always been passionate about food and cooking - and worked as an expert chef for over ten years, in many catering premesis. During this time I earned some fantastic knowledge and worked with some great chefs. I then studied a degree in Food Science and Nutrition, where I learnt about many subjects including: diet, nutrition and health, anatomy and phsiology, and recipe development and analysis.

As part of the course, you carry out a ‘self-audit' that will highlight any areas you need to improve. On the 13th December 2014 the new European legislation, Food Information Regulations for Consumers (EUFIC) came into force. If you sell food to the public, it will affect you. This course will help you understand how to label food in accordance with the new legislation.

We trained all the food service managers in allergens for EUFIC 2014. We provided nutritional analysis (information) on a selection of Ryvita's recipes and toppings for their website. We created the original crispbread recipe for Freed Foods. Given a brief of a Swiss-style gluten free flatbread, we developed the product through a series of testing and refinements until we found something that worked.
